1. Lightly coat eight-inch sq. glass microwavable baking dish with cooking spray. Place beef in baking dish. Add potatoes, mushrooms and carrots; distribute evenly.
2. Stir collectively salt, pepper, thyme and flour in small bowl. Sprinkle evenly over stew combination. Pour broth over meat and greens. Cover with 9-inch sq. of waxed paper; microwave on excessive for 30 minutes. (If microwave doesn’t have turntable, flip baking dish thrice.)
three. Remove dish from microwave and let stand, lined, 5 minutes earlier than serving.
Serving suggestion: Serve with a leafy inexperienced salad and sliced tomatoes.
Variation: Add 1 can (eight ounces) no-salt-added, lower inexperienced beans, nicely drained.
